Avaliação físico-química e microbiológica de linguiças elaboradas por defumação convencional e com fumaça líquida

Resumo

A defumação é uma prática antiga para conservar alimentos, proporcionando aroma, cor, sabor e textura específicos. Tradicionalmente, envolve a exposição do alimento à fumaça de madeira, mas esta pode conter compostos tóxicos e dificultar a padronização dos produtos. Como alternativa, a indústria de carnes tem utilizado a fumaça líquida, cujos efeitos são pouco estudados. O presente estudo avaliou as características físico-químicas e microbiológicas de linguiças defumadas convencionalmente (DC), com fumaça líquida (DL) e sem defumação (SD). Foram analisados três lotes de linguiças, formuladas com carne suína, toucinho e temperos, e submetidas a 80°C por três horas. As análises microbiológicas incluíram contagem de coliformes, bactérias aeróbias mesófilas e psicrotróficas, bactérias ácido láticas (BAL), Staphylococcus coagulase positivo e presença de Salmonella. As análises físico-químicas mediram proteína, gordura, umidade, cinzas e pH. Não houve diferenças significativas entre os tratamentos quanto às características físico-químicas e microbiológicas, indicando que a defumação, seja convencional ou com fumaça líquida, não altera a composição das linguiças. Em linguiças sem defumação foram encontradas contagens de coliformes a 30°C e BAL acima do limite mínimo de detecção da técnica. A defumação líquida mostrou ser uma alternativa viável ao método convencional, mantendo a qualidade e segurança das linguiças.
